Apple and Ginger Pudding (Recipe)

Ingredients:

2 tbsp melted butter (for greasing)

1/2 cup sugar

1/2 cup water

1/2 cup apple juice

6 green apples – peeled, cored and quartered

1 tsp ground ginger

125 g butter, softened

1/2 cup caster sugar

2 x medium eggs

3/4 cup self-raising flour

1 tsp ground ginger

1. Preheat oven to 180 C.  Brush a 20 x 24 (medium) ovenproof dish with melted butter.

2. Combine sugar, water and apple juice in a medium saucepan, bring to boil slowly, then reduce heat and simmer for 5 minutes.  Add apples and ginger, cover and cook for a further 8 – 10 minutes or until apples are tender.

3. Place butter and sugar in the bowl of an electric mixer and beat until light in colour and smooth.  Add eggs, one at a time and beat well after each one is added.  Fold in sifted flour and ginger with a large metal spoon.

4. Add warm apples to ovenproof dish and spoon pudding mixture over the top.  Make sure mixture is spread to the edges of the dish.

5. Bake for 35 minutes or until a skewer comes out clean when inserted into centre of pudding (remember not to go all the way through to the apple mixture!)
